Ingredients:
1 bag Birch Benders Strawberry Mochi Complete Pancake Mix
1 cup Rind Dark Cocoa and Sea Salt Coconut Crisps
1 ¼ cup water
In a large bowl, combine pancake mix and water, stir to combine and let sit for 2 minutes. Add coconut crisps and fold in gently.
Heat a non-stick pan over medium heat and pour roughly ¼ cup of batter into the hot pan. Cook for about 1.5 minutes on each side and remove.
For whipped cream:
1 cup heavy cream
2 tbsp sugar
1 tsp vanilla extract
Add ingredients to a large bowl and using a hand mixer or stand mixer fitted with the whisk attachment beat on medium-high speed for 3-4 minutes. Top pancakes with whipped cream and enjoy!
