Sprinkle Fruit Cookies

Ingredients:

* 1 ½ cup gluten free flour
* 1 tsp baking soda
* ½ tsp salt
* 1 cup softened vegan butter
* ½ cup brown sugar
* ¾ cup granulated sugar
* 2 eggs
* 1 tsp vanilla extract
* Rainbow sprinkles
* 1/4 cup RIND strawberry snacks diced finely
* RIND snacks to top cookies

Steps:
1. Preheat oven to 350 degrees
2. Mix flour, baking soda, salt, sugars, sprinkles and diced RIND snacks
3. Add remaining ingredients and mix until smooth
4. Roll dough into quarter size balls and place on greased baking sheet
5. Bake for 15 minutes or until golden brown
6. Remove from oven and let cool for 20 minutes
7. Top cookies with extra strawberry RIND pieces and enjoy!
