Ingredients (serves 4):
- 4 cups unsweetened apple juice
- 2 cinnamon sticks
- 2 whole cloves
- 2 strips fresh orange peel
- 1 inch fresh peeled ginger
- 1 bag of RIND Orchard Chewy Blend
- 2 bottles of ginger beer, chilled
- 1 lime, quartered
- Optional: prosecco, chilled
- Rosemary sprigs for garnish
Instructions:
- On medium heat, pour apple juice, 1 cup of RIND Orchard dried fruit snacks, cinnamon sticks, cloves, orange peel, and fresh ginger into a medium saucepan.
- Leave pan uncovered and once simmering reduce heat to low. Cover pan and cook for 15 mins.
- Remove from heat. Separate the liquid with a strainer, reserving the fruit and cinnamon sticks.
- While the juice is cooling, rough chop the juice soaked fruit. Create garnishes using the soaked cinnamon sticks, rosemary sprigs, and remaining RIND fruit in the bag
- Prep glasses for serving. Spoon in chopped fruit to the bottom of each glass, add juice to fill it halfway, top with a splash of ginger beer, juice of one quartered lime. If using Prosecco, leave room in glass to add it on top.
- Garnish and enjoy!
