High Protein Apple Pie Baked Oatmeal

  • 1 ripe banana, mashed (or 1/2 cup unsweetened applesauce)
  • 2 eggs
  • 1 1/2 cup milk of choice
  • 1/3 cup maple syrup or honey
  • 2 tsp vanilla extract
  • 2 cup rolled oats
  • 2 tbsp chia seeds
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 1 cup diced apple
  • 1/2 cup chopped pecans or sliced almonds
  • 1/3 cup chopped @rindsnacks Orchard Blend (dried apples, persimmons and peaches)


  1. Preheat the oven to 375℉. Spray a 9x13 or 9×9-inch baking dish with cooking spray.
  2. In a bowl, combine all of the wet ingredients and mix together. Then add oats, chia seeds, baking powder, salt and cinnamon. Mix well then stir in diced apple, chopped nuts and chopped @rindsnacks.
  3. Transfer to the prepared baking dish.
  4. Bake for 30-35 minutes or until center is set. Let sit for 10 minutes before serving.
  5. Top with maple syrup or Greek yogurt!
