No-Bake High Protein Apple Pie Cheesecake

Ingredients:

  • 1 cup Cottage cheese
  • 4oz Cream cheese
  • 1 tsp Vanilla
  • 1/4 cup Maple syrup
  • 1 tsp Apple pie spice
  • handful of Apple Chips & chewy apples from Orchard or Straw-Peary

Base Ingredients:

  •  1 cup graham cracker crumbs
  • 2 T butter
  • 2 T maple syrup
  • Dash of apple pie spice

Instructions:

  1. Combine graham cracker crumbs and butter. Place in the bottom of mini mason jars or festive serving dishes.
  2. In a blender combine all ingredients for cheesecake.
  3. Layer over top the graham cracker base.
  4. Place in the fridge to set up while preparing apple topping.
  5. In a small saucepan pan heat apples, butter, maple syrup and apple spice until apples are tender and sauce begins to caramelize.
  6. Layer on top of cheesecake, garnish with @rindsnacks apple chips.
  7. Eat immediately or refrigerate for a thicker cheesecake.
