Ingredients
Cake:
- -4 oranges (600g)
- 1.25 tsp baking powder
- 1.25 cup white sugar
- 6 eggs
- 2.75 cup almond flour
Icing:
- .25 cup @rindsnacks orange chips
- 1.5 cup powdered sugar
- 1 orange, juiced
Instructions:
- Bring a pot of water to boil. Drop the oranges in the water and boil for 40 minutes. Preheat oven to 320°F
- Remove and place in a food processor and blitz until finely chopped.
- Then add almond flour, eggs, baking powder and sugar and blitz until fully combined
- Pour into a prepared 9in cake pan and bake for 60 minutes or until a toothpick comes out clean
- Allow to cool for at least 1 hour or overnight is best.
- Place powdered sugar, dried oranges, and orange juice into a standing mixer or using a hand mixer, whisk together until fully smooth
- Drizzle over the cake and then decorate with more dried oranges.
