Vegan Apple Oatmeal Bars

Ingredients:

  • 1 tbsp flaxseed
  • 2 tbsp water
  • 1 cup rolled oats
  • 3/4 whole wheat flour
  • 3/4 all purpose flour
  • 1/2 cup sugar
  • 6 tbsp vegan butter
  • The the filling:
  • 3 1/4 cup RIND Apple Chips
  • 1 1/2 cup apple cider
  • 1/2 cup sugar
  • 1/4 cup cornstarch

Instructions:

  1. Preheat oven to 400 degrees and grease a 9 in baking dish.
  2. Whisk together flaxseed and water. Set aside.
  3. Add oats, flours, and sugar to food processor. Pulse to combine.
  4. Add vegan butter and mix until incorporated.
  5. Add the flaxseed mixture and mix until combined.
  6. Divide the crust in half.
  7. In a saucepan over medium heat add 2 cups apple chips, cider, sugar and cornstarch. Cook for 5 minutes stirring frequently.
  8. Add the rest of the apple chips.
  9. Press half of dough in dish, add the filling and the other half of the dough.
  10. Bake for 15 minutes. Reduce heat to 350 degrees and cook for another 20 minutes.
  11. Let cool thoroughly before slicing.
