Vegan and Gluten Free Strawberry Brownies


  • 1 bag of RIND Snacks Cocoa Berry REMIX
  • 4 tbsp unsalted butter, melted
  • 2 vegan eggs
  • 1 tsp vanilla
  • 3/4 cup coconut sugar
  • 2 cups almond flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 6 tbsp strawberry jam
  • 1/2 cup vegan chocolate chunks or chips
  • 2 fresh strawberries


  1. Preheat oven to 350°F.
  2. Whisk together the melted butter, vegan eggs, vanilla, and coconut sugar in a large bowl.
  3. Put RIND Cocoa Berry REMIX into a food processor and grind
  4. Add the almond flour, cocoa powder, RIND REMIX, and baking powder to the bowl. Whisk or fold in the dry ingredients (it will be a thick batter)
  5. Spray your pan with oil
  6. Transfer the brownie batter to the pan and spread it out in an even layer.
  7. Dollop strawberry jam onto the top of the brownies.
  8. Use a toothpick or knife to swirl the dollops into the tops of the brownies.
  9. Sprinkle chocolate on top.
  10. Slice the strawberries and then lay the slices on top of the brownies.
  11. Bake for 15-20 minutes until the center cooks through.
  12. Let cool and cut.
