Ingredients - Vanilla Strawberry cupcakes:
- 1½ cups flour
- ¼ cup sour cream
- ¼ cup canola oil
- 1 cup sugar
- 2 eggs
- 1½ tsp vanilla
- 1½ tsp baking powder
- ½ tsp salt
- ⅔ cup milk
- 1 cup chopped fresh strawberries
Ingredients - Pear frosting:
- 1 cup butter
- 4 cups powdered sugar
- 3 tbsp heavy whipping cream
- 3 tsp. Pear juice
Instructions:
- Let wet ingredients sit out for 1 hour
- Preheat oven to 350°F
- Whisk sugar, eggs, oil, vanilla. Mix in sour cream
- In a separate bowl, combine flour, baking powder, salt
- Add dry mix and milk in two parts to the batter. Whisk until smooth
- Scoop into cupcake liners ⅔ full
- Bake 14–16 min. Toothpick test = clean = done!
- Let cool completely then frost with pear buttercream
