Straw-Peary Cupcake

Ingredients - Vanilla Strawberry cupcakes:

  • 1½ cups flour
  • ¼ cup sour cream
  • ¼ cup canola oil
  • 1 cup sugar
  • 2 eggs
  • 1½ tsp vanilla
  • 1½ tsp baking powder
  • ½ tsp salt
  • ⅔ cup milk
  • 1 cup chopped fresh strawberries


Ingredients - Pear frosting:

  • 1 cup butter
  • 4 cups powdered sugar
  • 3 tbsp heavy whipping cream
  • 3 tsp. Pear juice


Instructions:

  1. Let wet ingredients sit out for 1 hour
  2. Preheat oven to 350°F
  3. Whisk sugar, eggs, oil, vanilla. Mix in sour cream
  4. In a separate bowl, combine flour, baking powder, salt
  5. Add dry mix and milk in two parts to the batter. Whisk until smooth
  6. Scoop into cupcake liners ⅔ full
  7. Bake 14–16 min. Toothpick test = clean = done!
  8. Let cool completely then frost with pear buttercream
