- 3 cups cake flour
- 1 1/2 cup sugar
- 1 tbl baking powder
- 1 tsp salt
- 1/4 cup applesauce
- 1 can coconut milk
- 1/4/ cup butter (melted)
- 1/2 cup coconut oil
- 1/2 cup of rum
- 2 tsp vanilla
- Crushed @rindsnacks cocoa coconut crisp
- Crushed @rindsnacks coconut crisp
Cream Cheese Icing
- 5 cups powdered sugar
- 18 oz of room temperature vegan cream cheese ( I used @violife_foods )
- 1/2 cup room temperature butter
- 2 tsp vanilla
- 1 shot of rum
*mix together cream cheese and butter. Slowly mix in powdered sugar. Mix in rum and vanilla extract. Blend until smooth. Add in more rum if needed.
