Cinnamon Spiced Homemade Granola

Ingredients:

  • 1 3/4 cup organic oats
  • 1/4 cup pumpkin seeds + 1/4 cup chopped almonds (any nut/seed will work)
  • 1/2 cup dried coconut-no sugar added
  • 1/3 cup RIND Orchard mix or any dried fruit
  • 1 tbsp cinnamon
  • Pinch of flakey salt
  • 2 tbsp maple syrup + 2 tbsp evoo

Instructions:

  1. Mix all your dry ingredients together in a bowl
  2. Combine the maple syrup and EVOO then stir in with the ingredients
  3. Evenly distribute the mix on a parchment line baking sheet
  4. Bake at 325 for 35 minutes.
  5. Let the granola cool completely before removing. This is needed to create the BIG clusters!!
