Apple Crisp Streusel Cookies

Ingredients:

Cookie Dough:

  • 1 cup butter, softened
  • 3/4 cup confectioners sugar
  • 1/4 cup packed brown sugar
  • 1 large egg, room temperature
  • 2 tsp vanilla extract
  • 2 1/2 cups all purpose flour
  • 1 tbsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt
  • dash ground nutmeg
  • sugar, for coating
  • 1/2 cup apple butter

Streusel Topping:

  • 1/2 cup butter, melted
  • 1 cup brown sugar
  • 3/4 cup all purpose flour
  • 3/4 cup quick oats
  • 1/2 cup chopped RIND Apple Chips

Instructions:

  1. Preheat oven to 350F and line  a baking sheet with parchment paper
  2. Cream butter and sugars until light and fluffy. Mix in egg, vanilla, salt, and baking powder
  3. Add flour, cinnamon, and nutmeg to wet ingredients
  4. In a small bowl, combine streusel ingredients and mix melted butter in until crumbly
  5. Spread evenly on a cookie sheet and bake for 10-30 minutes
  6. Scoop cookie dough and roll in sugar to coat
  7. Place on cookie sheet and gently press down with a spoon or thumb to form a crater in each ball
  8. Fill with 1 tsp apple butter
  9. Bake for 10-12 minutes until edges are set and tops are golden
  10. Let cool then top with baked streusel and enjoy
